DRY ANARI

Dry Anari is a hard whey cheese, with a mild milky taste. It is made from pasteurised mixed milk and whey. In the manufacturing process, when the whey is heated the proteins (albumins and globulins) float on the surface of the processing vessel. On acquiring the required firmness they are scooped in moulds and lightly pressed. After cooling the cheese is mildly dry salted, then cooked and dried.

Due to its high content of whey proteins, Dry Anari is highly nutritious. The consumption of 100g of Anari per day provides the daily requirements of the essential amino acids.

When grated it makes a perfect topping for pasta. Shaves of Anari with a sprinkle of dried mint make also a perfect topping for a tomato salad.
